Ingredients
The ingredients you need to make this happen:
- 2 cups cherry tomatoes (or grape tomatoes)
- 1 block feta cheese (about 7–8 oz)
- 3 tablespoons olive oil
- 3–4 cloves garlic, peeled and left whole or sliced
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 8 oz pasta (short shapes like penne, fusilli, or farfalle work best)
- Fresh basil, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Assemble in a baking dish: In a medium-sized baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and garlic cloves. Drizzle olive oil over everything and sprinkle with red pepper flakes, salt, and pepper.
- Bake for 30–35 minutes, until the tomatoes burst and the feta is golden and melty.
- Meanwhile, cook the pasta in salted water according to package directions. Reserve about ½ cup of pasta water before draining.
- Mix the sauce: Remove the baking dish from the oven. Use a spoon to mash and stir the feta, tomatoes, and garlic into a creamy sauce.
- Toss in the pasta, adding a splash of reserved pasta water to loosen the sauce if needed. Mix until everything is well coated.
- Garnish with fresh basil and serve warm.
Tips & Variations:
- Add spinach or kale after baking for extra greens
- Toss in cooked chicken or chickpeas for protein
- Use gluten-free or chickpea pasta if preferred
- Try with goat cheese or ricotta if you’re out of feta
