It’s officially fall here in Northern New Jersey. I know it’s been officially fall since September, but it can still be hot during that month. October was filled with warm weather with warm-ish breezes. We happened to luck out on our wedding day – just as we had hopped. We were praying there would be no rain, but we had the best weather for an October wedding. It was cool in the morning on the river where the venue is situated, and quite overcast. But come the afternoon, when it was time for pictures, it warmed up and was sunny.
Now it’s cold, and we’ve had our first few frost this week. The leaves are turning brilliant colors of gold, orange, and fiery red. Larry already wants me to start decorating for Christmas, which I’m not a fan of! It’s too soon for me.

Truth be told – I don’t like to spend a ton of time eating breakfast in the morning, even though it’s considered the most important meal of the day. However, I do not skimp out on breakfast and make sure it’s super filling so there’s a good start to the day. I know how hard it is for those of you who may be really short on time, and need something even quicker than 15 minutes, as a grab n’go. Don’t worry, I’ll soon have you covered with recipes coming up soon.
What would be more fitting on a cold fall morning than a bowl of hot oatmeal with warm caramelized apples.
Quick & Easy Gluten-Free Apple Oatmeal

Cozy up on a cold fall day with this simple apple oatmeal recipe
- saucepan
- pot
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup gluten free oats
- 1 cup milk of choice
- 1 red apple ((diced))
- 2 tsp raw honey
- crushed almond ((optional))
- maple syrup ((to taste))
- cinnamon ((topping))
- 2 tbsp water
In a small saucepan over medium heat, add diced apple, water, cinnamon, nutmeg, and honey. Stir ingredients well together. Apple should be cooked until soft and caramelized for about 5 to 10 minutes. Most of the water will be absorbed or cook off.
While the apple is caramelizing, in a pot combine oats, milk, vanilla extract, and cinnamon. Stir the ingredients together well and bring to a simmer. Once the mixture is simmering, lower the heat and continue to cook, stirring continuously until the oatmeal is thick and creamy. The milk should be absorbed by the oatmeal.
Serve in a bowl topped with warmed apple, drizzle with maple syrup, and add crushed almonds and sprinkle cinnamon, if desired.
If you’re in the market for gluten-free oats, there is a great brand called ONE DEGREE ORGANIC FOODS Organic Sprouted Rolled Oats that can be purchased through Costco. However, it’s not available so you’ll have to purchase it in-store. It’s a large bag, certified organic and has a QR-code to scan to trace where your oats came from (totally unnecessary but still cool for those interested). One Degree Organic Foods also indicates that it has no glyphosate!
